If you’re looking for a delicious nutrient dense lunch that’s easy to make, then you’ve come to the right place. This Organic Vegan Avocado Chickpea Smash is the perfect green lunch loaded with nutrients that’ll keep you feeling full, rejuvenated, and satisfied for hours. It only takes a few minutes to prepare and presents very well, as shown in Wendy’s pic below!
The Organic Vegan Avocado Chickpea Smash Recipe
1 can chickpeas
Hefty handful of parsley
Hefty handful of cilantro
Hefty Handful of spinach
1 celery stalk diced
2 branches of green onions diced
1 tsp turmeric
1 tsp fresh ground black pepper
1 tsp cayenne pepper
1 tsp garlic powder
1 lemon or lime juiced (I use whatever I have on hand and add some zest as well)
All ingredients are then blended in a food processor (We use the Cuisinart Available on Amazon). You can scoop over gluten free or sprouted grain bread, grilled baguette with olive oil drizzle topped with cucumbers, tomato, radish, or your favorite veggies. Or simply eat as a dip with quinoa flax chips.
Optional adds: Some people like raw red onion so you can add if you desire. Also if you want cheese add 1/4 cup of grated parm or feta crumbles if you like.
